Chicken Tortilla Soup

Vegtable oil

8 corn tortillas cut into strips

1 onion

2 large cloves of minced garlic

1 Tablesoop of chili powder

2 teaspoons ground cumin

1 teaspoon dry oregano crumbled

1 bay leaf

6 cups of chicken stock

1 - 8oz can tomato sauce

salt

1 teaspoon sugar

ground peper

2 large chicken breasts or whole chicken

1 1/2 cups of corn

sour cream, cilantro, cheese, chooped red onion, avacado

Fry tortillas until crisp and golden in vegetable oil. Drain on paper towels, Transfere 1 tablespoon of vegatable oil to a large pot. Add onion and saute over medium heat for about 5 minutes

Add garlic, chilid powder, cumin, orgegano, and bayleaf. Saute 1 minute

Add chicken stock, tomato sause, salt , sugar, and pepper and bring to a boil.

Add chicken. Cover pot and simmer until chicken is cooked, recipe said about 15 minutes, but the longer you cook it the easier to shreed. Remove to cutting board, and shred chicken. Once shredded put back into pot, add corn.

Simmer for another 5-10 minutes

pour into bowl top with sour cream, cilantro, chees, chopped red onion, and avacodo.

I would bet some leftover turkey could be a hit with this.

one way or the other I think I'll be tryin it.
